In honor of March being National Nutrition Month, the Person County Food for Thought program will be promoting tips over the coming weeks on how people can “Go Further with Food,” simply by incorporating food, nutrition and physical activity tips.

One of the first tips is to eat breakfast. It is important to give your body fuel for the day and to break the fast by starting the day with a healthy breakfast.

Throughout the day, it is good to make half your plate fruits and vegetables, and it will add more color and flavor to your meal.


Portion sizes have continued to be a struggle for many people. Get out your measuring cups and compare it to the nutrition label of the items you are eating to see if you are eating too much.

No matter what or how much you are eating, regular physical activity has so many health benefits. Adults should get 150 minutes of exercise per week.

Eating small, healthy snacks throughout the day will also keep you feeling full, so you do not overeat at your meals. And remember that all of the foods you eat – except for the fresh produce – have a nutrition facts label that can help you shop, eat and drink smarter.


To better help people in the community, the Person County Food for Thought office is hosting a “Med Instead of Meds” six-week class series to share the basics of the Mediterranean way of eating.

Each session will cover one of the simple steps to a healthier way of eating. Participants will increase their understanding of the health benefits and concepts related to the Mediterranean style eating pattern.

Classes are scheduled for Tuesdays, March 13, 20 and 27, and April 10, 17 and 24 from 12-1 p.m. It is only $10 to register for the entire six-week program.

Spinach and Pine Nut Pasta – servies 4-6

100% whole wheat pasta, ½ of 16oz. box

½ lb. fresh spinach

1 box baby mushrooms

1 red pepper, diced

2-3 carrots, diced

¼ cup pine nuts

¼ cup olive oil

½ tsp minced garlic

½ cup parmesan cheese, grated

Salt and crushed red pepper, to taste

Cook the pasta according to package instructions. Keep aside. Heat the olive oil in a large skillet. Add garlic and pine nuts and sauté until light brown. Add spinach, mushrooms, red pepper and carrots. Sauté for few minutes until cooked to desired softness. Add the pasta and salt. Mix well. Serve with a sprinkle of parmesan cheese and crushed red pepper flakes, as desired.
