A woman who had struggled with weight issues her whole life has revealed how easy it was to shed 40 kilograms after following the carb-limiting Keto diet.

New Zealand-based Shannon Anderson, 26, confessed two years ago she tipped the scales at 115 kilograms.

The mother-of-three told FEMAIL she had tried many times in the past to stick to a diet, but nothing had worked, and this affected her confidence.

She said she was constantly beating herself up for the way she looked and realised this was having an effect on her kids, particularly her daughter, who was five at the time.

‘I was worried about having a negative impact on my daughter because she heard me complain about myself and put myself down,’ she explained. 

‘I would be trying on clothes and looking in the mirror and saying to myself “I can’t wear that, I’m too fat”.’

Wanting to be a better role model, she revealed, helped her find a healthier way to live. 

‘My daughter didn’t need to grow up thinking she was fat,’ she said.

Before finding the ketogenic diet, the 26-year-old said she had struggled to find anything that could work long-term.  

‘I never had the willpower to keep going. I was depriving myself of the foods I wanted and I always would end up cheating.’ 

WHAT IS THE KETO DIET? 

The ‘Keto’ diet, as it’s more commonly known, encourages the body to burn fat through a low-carb, high fat intake

Those on keto-based food programmes eat a diet that’s significantly higher in fat 

This is offset by a major reduction in carbohydrates which puts the body into a metabolic state called ketosis

Mrs Anderson said she decided to give the ketogenic diet a go after her cousin, who was a similar build to her, had lost weight following the food plan.

‘I saw how well it worked for her and thought it may work for me too,’ she said.

After reading as much as she could about the diet, Mrs Anderson started following a self-devised food plan at the beginning of 2016.

Twelve months down the track, she said she had gone from someone who regularly binged on sugary treats and junk food to a person who could eat bacon and eggs for breakfast and still lose weight.

Over the course of that period, Mrs Anderson shed 40 kilograms, though she admitted in the beginning the weight came off first as centimetres.

‘About a month into it, I wasn’t seeing any changes on the scales at all, she said, ‘and I was ready to give up.

‘But my husband pushed me to keep going because he could see the changes, even if I couldn’t.

‘Then one day I put on a pair of shorts and they fell down, and I realised that it obviously was working.’

After that, she said the scales kept moving downwards.

WHAT SHANNON EATS IN A TYPICAL DAY: 

Breakfast: (usually around 10am)

Bacon, two eggs, avocado, and full-fat mayonnaise

Lunch: 

Ham or salami with cream cheese or boiled eggs 

Dinner:

Chicken breast stuffed with cream cheese, bacon and sugar-free sweet chilli sauce served with sauteed vegetables

Snacks:

coffee with cream, small handful of almonds 

‘I had way more confidence, a lot more energy and I felt a lot healthier. It was awesome.’

The busy mother said she lost the weight simply as a result of following the diet, and she hadn’t done any exercise at all.

However, she said it helped that she had started a new job that was much more active than the one she’d had previously.

Her efforts also had an effect on those around her – her husband lost 10 kilograms during the period, and now her grandmother, who had also started Keto, was seeing results.

Last year Mrs Anderson became pregnant with her third child, which meant she had to put her eating plan on hold.

‘Morning sickness with no carbs is no fun,’ she said.

Now her baby is five months old, and Mrs Anderson wants to go back to the diet and plans to restart it in March.

The new mum also said she believes it’s possible for anyone to lose weight, and keep it off, following the diet, but she stressed it does take commitment.

‘It crazy how it works. And people don’t believe it until they see the results because they don’t understand how eating fats can help weight loss.

‘It might not work for everyone,’ she concluded. ‘But it does work.’
