Good Taste with Tanji: Easy seafood recipes make for fun, lighter fare

Have you been loving the springtime weather! Hope you’re enjoying the cool temps AND our new showtime on KPRC for our television show Goodtaste with Tanji – 5 p.m. every Saturday afternoon. It puts me in the mood for lighter fare, like seafood. So, I put together a few of our fun seafood recipes – easy stuff that you can pull together in a jiffy.

For starters, tackle these Grilled Shrimp Tostadas with Black Bean Salsa from Goya Foods. If you haven’t tried Goya’s black beans, you are missing the best beans in a can you’ll ever taste! They’re really, really good. You’ll have these tostadas ready in less no time.

Another fresh idea is a towering Seafood Campechana with Gulf shrimp, crab and crispy tortilla chips. This recipe comes from our friends at Goode & Company. (I’m a regular for their Mexican breakfasts at their Tex-Mex spot on Kirby.)

Another tasty version is Chef CJ Johnston’s shrimp-only version at Tookie’s Seafood in Seabrook. This too has a vibrant tomato flavor throughout and a fun ‘secret’ ingredient – Zing Zang Bloody Mary Mix.

One of my favorite seafood spots is Star Fish Coastal Kitchen & Bar in the Heights. The wine list is full of fun, approachable choices. They also serve tasty mini-martinis with blue cheese stuffed olives, perfect little starters for what’s always a delightful meal. Star Fish shared their recipe for their Grilled Oysters with Maître d’ Butter and Parmigiano Reggiano. Why not sip a little Rosé while you’re grilling!

For another delicious twist on Gulf oysters, try State Fare Kitchen & Bar’s Roasted Oysters with fresh red bell pepper and spicy bourbon butter.
