Michael Schall loved the healthy food options when he lived in New York City. When he moved back to Omaha, he was disappointed with the options. So Schall opened Greenbelly. “It’s an eco-friendly healthy food concept,” says Schall. “We prepare most of the food right in front of you. Salads, wraps, no fryers, we hand slice over 300 pounds of chicken a day. We make all our soups and most of our salad dressings.”

Schall opened Greenbelly in 2008. It was successful so fast they moved to their current location, south of Dodge at 114th within a year. People really wanted healthy eating options. “We are seeing a lot more requests,” says Schall. “Business is growing, growing, and growing with internet and TV, more people are focused on healthy eating.”

Schall says Greenbelly offers guilt-free options. They use the freshest, high quality ingredients. Schall says they serve fresh food fast, not fast food. “Little something for everyone” says Schall. “We have pizzas on the menu, healthier pizzas. Come in get a super fit salad or a very berry salad or a sandwich or a wrap.”

Schall is serious when he says they are eco-friendly. The plastic packaging they use for their to-go meals, is made out of plant starch. There is a second Greenbelly location in Elkhorn. A former customer loved the food so much, he bought a franchise to put out west.
